Recipe: Mooli Ka Paratha (Radish Stuffed Indian Flatbread)

I detest mooli ki kanji.  I don't know what others call it as, but mooli ki kanji is radish chunks in some pickle-sorta liquid and super stinky.  Once the lid of the bottle of kanji opens at home, the stench is inevitable.  No offense to those who like it, but it is because of that kanji I started hating radish since childhood.

But this muli ka paratha (radish stuffed paratha) changed my view and I accepted that radish in itself is not stinky and does not taste as bad as I had imagined. 

This is a pretty simple & straightforward stuffed paratha recipe from Shobha Indani's cookbook for Stuffed Mooli Paratha & trust me, tastes good too.


Mooli ka Paratha - Radish Stuffed Paratha
What you need for Mooli Paratha:
For stuffing:
For tempering:
1 Tbsp Oil
½ tsp Mustard Seeds
2 cup Radish, grated
½ tsp Cumin Seeds
1 pinch Asafoetida

1 tsp Red Chili Powder
For dough:
½ tsp Turmeric Powder
3 cup whole wheat flour
2 Tbsp oil
1 tsp Chaat Masala
½ tsp salt
2 Tbsp Cilantro, chopped

¼ cup Chickpea Flour
Ghee/oil for shallow-frying
1 tsp Dry Mango Powder

Salt to taste

Let’s Begin!

1.  Knead all ingredients for the dough using required water until smooth but a little firm.  Keep aside 15-20 minutes.

2.  Heat oil in pan, add tempering.  Add radish + green chili paste + ginger paste & stir-fry 1 minute.  Now add remaining ingredients, mix & cook 1 more minute.  Allow to cool.

3.  Divide dough & radish stuffing in equal portions, and roll the mooli paratha as shown in the pictures.  Shallow-fry both sides using ghee/oil until golden brown.

4.  Sprinkle chaat masala on hot mooli parathas, top it with a lob of butter & serve paratha with curd/raita, ketchup, green chutney, or pickle.

Notes:
– Use chopped green chilies or grated ginger accordingly if you don’t have pastes; same thing.
– Put the ingredients for stuffing in the order listed, or at least don’t put chickpea flour earlier otherwise it will soak up all the oil.
This mooli paratha recipe should make about 8-10 round parathas of ½ inch thickness & 6-7 inch diameter.
