Two-Minute Microwave Eggless Chocolate Cake | Eggless Baking

There are days of hunger pangs for a yummy homemade cake.  Then there are times when there is no patience for preheating an oven.  Then there are days when baking a big cake for just one or two persons is not practical.  Ahhh.  What to do?!


This two-minute microwave eggless chocolate cake is the solution.  Trust me.


It will take just few minutes to measure the ingredients and bring everything together.  You don’t even have to be precise, really!  Give this quick chocolate cake recipe a try once to get an idea.  Then the next time you have surprise guests over, assembling a dessert for them will be a piece of cake.  Literally.


Two-Minute Microwave Eggless Chocolate Cake Recipe
Serves 1-2

3 Tbsp all-purpose flour
1 Tbsp unsweetened cocoa powder
3 Tbsp granulated sugar
⅛ tsp baking soda
⅛ tsp salt
1½ Tbsp oil
3 Tbsp milk
¼ tsp vanilla extract


Whether you prepare everything inside one mug or mix in a bowl and transfer to other baking dish:
1. Mix dry ingredients using fork or a small sieve.
2. Add wet ingredients and mix, no lumps.
3. Microwave on high power for 2 minutes straight.
4. Test doneness with toothpick; should come out clean.
5. Let cool down for 5-10 minutes then serve cake in mugs or invert onto a plate, decorate, relish.

Serving options: once the cake is cooled dust some powdered sugar, and/or top it with whipped cream, and/or drizzle some chocolate or caramel sauce, and/or garnish with a scoop of ice cream, and/or add some chocolate chips or nuts.  Or as is.  Still yum.


In the microwave, if you keep an eye you will see the chocolate cake rises to the top instantly within 1 minute then slowly falls down.  (I love watching it!)  So make sure your batter is no more than half the mug/baking dish otherwise it will overflow.

I like this quantity of cocoa powder, but you might want to add ½ Tbsp more for a darker chocolate cake.  But adding any more will make the cake bitter (or add more sugar to balance).

Blunder Alert!
Once I microwaved it for 3 minutes.  Upon cooling, the cake turned into a stone.  Oops.

Yesterday I made this quick microwave 2-minute eggless chocolate cake with quick strawberry fans and blueberries placed on the sides and quick melted chocolate text piped on plate and quick sprinkle of powdered sugar...for my mother-in-law's birthday.
