Crunch Munch with Eggless Chocolate Crunch Cookies

These eggless chocolate cookies are not the chewy kinds.  They are more of crunchy cookies, like chips.  Call these Chocolate Cookie Chips, instead of chocolate chip cookies.  But after the crunchy bite, they melt in your mouth.


These Chocolate Crunch Cookies from Shobha Indani's recipe don't require too many ingredients & are very quick and simple to make.  You can either roll the soft cookie dough out & then use a cookie cutter to cut into desired shape, or roll into balls & flatten like I did.

I hope I have made the procedure seem very easy - because making these eggless cookies really IS easy!


Eggless Chocolate Cookies - easy, crunchy, yummy

What you'll need for eggless chocolate cookies:
150 gm all-purpose flour
¼ tsp baking powder
¼ tsp salt*
2 Tbsp cocoa powder
125 gm butter, at room temp
100 gm powdered sugar
½ tsp vanilla extract

Let's Begin!
1.  Prep:  Preheat oven to 140oC [~ 275oF] + grease/line baking sheet.
2.  Sieve:  flour + baking powder + salt + cocoa; no lumps.
3.  Whip:  butter + sugar + vanilla; till light & fluffy.
4.  Mix:  flour mixture + butter mixture; make soft dough.
5.  Shape:  cookie cutter or flatten; about 15-20 pieces depends on size.
6.  Bake:  140oC [~ 275oF] for 15-20 mins till light brown.
7.  Done:  Allow to cool down, remove cookies from baking tray, store in air-tight container.

Note: 
* Original recipe asked for ½ tsp salt, but the first time I made these chocolate cookies I found them saltier than they should be, therefore reduced to ¼ tsp.

Don't fancy chocolate cookies?  Replace cocoa powder with equal amount of all-purpose flour & you get Vanilla Crunch Cookies.

      Step # 5: approx 15-20 pcs - depending on size, whether you roll in ball & place flat, or what cookie cutter you use ... I guess I got about 18 with 1.5" diameter, rolled & pressed as a patty :)
