Eggless Ferrero Rocher Cupcakes | Eggless Cupcake Recipe | Eggless Baking

Since my high school years, I used to have this strange habit of collecting Wrigley's chewing gum wrappers (white, yellow, and green colors) and sticking the Ferrero Rocher sticker (from the golden chocolate wrapper) onto the refrigerator door.


In every few months my mom would have to clean the door and remove the sticky residues, and she never understood my fixation for the Ferrero Rocher labels.  Honestly, I still do not, either.
My Wrigley's wrapper collection is still safe in the carton (hopefully?) along with my other things in Bangkok when I left home to get married, and got rid of that habit.  But this hobby of sticking the Ferrero Rocher labels on the refrigerator door before unwrapping the chocolate went on until last year.



I have loved Ferrero Rocher chocolates since childhood.  There was Kit Kat, with chocolate outside and the similar crunchiness of a biscuit inside.  But nothing beats a Ferrero Rocher, as a chocolate and as its packaging.


A hazelnut secretly hidden inside a chocolate ball that's enclosed with a layer of biscuit, covered with another layer of chocolate and hazelnuts, covered with a thin golden-silver sheet, and glued onto its rich dark brown wrapper.  Almost looks like a golden cupcake in a brown cupcake liner.  Doesn't it?

On that note, how about actually inserting these Ferrero Rocher chocolate balls inside a cupcake?



Use any chocolate cupcake recipe.
Freeze the Ferrero Rochers 20-30 minutes before you begin.
Dunk a Ferrero Rocher ball in the center of each cupcake batter and press down gently.
Bake as required in the recipe.  Insert a toothpick slant into the cupcake.  If you insert right into the center, you will hit the Ferrero Chocolate.  Therefore, insert sideways toward the center. 


Cupcakes are done when toothpick comes out almost clean (with may be just a couple of crumbs clinging).  Baking any further will result in dry cupcakes instead of moist.


Remove pan from oven onto the cooling rack, leave for 10 minutes, then transfer all the cupcakes onto the rack and leave until completely cooled down.


Then decorate these Eggless Ferrero Rocher Cupcakes with your choice of frosting.  A chocolate frosting will be the best accompaniment to these cupcakes.  You can do a glazed, drizzled, dipped, or piped frosting, and then sprinkle some chopped walnuts on top.  If in a rush, go ahead with Nutella - perfect hazelnut flavored chocolate frosting for these hazelnut flavored Ferrero Rocher cupcakes.



This one here is a simple butter, powdered sugar, cocoa powder, hazelnut extract, and milk whipped together to form a runny frosting in which I dipped the Ferrero Rocher cupcakes.

Any curiosity why you should freeze the Ferrero Rochers before?  So that they are crisp inside-out while they bake inside a cupcake batter.  So by the time the chocolates warm up, they're still having their crunchy exterior instead of a soft one.  So when you bite into them halfway, you can see each layer clearly.



The best part is when you surprise someone with these chocolate cupcakes, and then surprise them a little more with the Ferrero Rocher chocolate inside.

  1. this is so good... the ferrero rocher inside... this chocolate reminds me of my courting days with my husband, memories... :) but i had not kept any of the stickers due the fear my parents would catch me at that time.. hehe.. I think I should try this for him... :)
