Beetroot and Peanut Salad Recipe
My Mom's recipe
Serves 3-4
2 cups beetroot, julienne
¾ cup roasted peanuts, crushed
1-2 tsp lemon juice, to taste (I like it tangy)
1 tsp green chilies, finely chopped, or to taste
2-3 Tbsp cilantro, finely chopped
1 tsp roasted cumin seed powder
¾ tsp salt, or to taste

How to make Beetroot and Peanut Salad:
In a bowl add ALL the ingredients. Mix well, taste, adjust, and serve. DONE! DONEEEE!!!!!
See? Making salads does not have to be elaborate. And does not even need 10+ ingredients like my previous Colorful Mixed Salad post (inspired from the salads served at the Apple campus in Cupertino) does.

Did you roast the beetroot? Is the beetroot cooked or raw? If not cooked, isn't it too hard to eat?
The beetroot is neither boiled nor cooked. It was thinly sliced using knife but you can use a food processor if it grates/juliennes well. When mixed with salt, lemon juice, and other ingredients, the woody taste of beetroot kinda tones down. It's not hard to eat at all...it's good and crunchy to eat. But then again - raw beets may be an acquired taste :)
