I was actually thinking of grinding the chillies or garlic or ginger along with some olive oil to help grind them and add lemon juice towards the end. I've done it before with garlic and it came out perfectly. . Your garlic paste must have been kept in the open (somehow exposed to air), or you might have used a spoon of something else into the paste. Those are two reasons I know why garlic paste turns green. If it is very slight green, I still use it.
